Hit 250 briskets this weekend, timing finally makes sense
I've been tracking every cook on my offset since 2019 and Saturday's brisket was number 250. For the first time ever, my stall window matched my planned rest time perfectly without any panic holds or foil wraps. Did anyone else notice their cook times getting way more consistent after a certain number of smokes, or am I just lucky with this batch of wood?

Tracked 150 butts on my offset before I finally stopped guessing with fire management. One weekend I ran three in a row, same wood, same pit, and the last one came in two hours early out of nowhere. Turned out my thermometer was reading 30 degrees low the whole time, so I fixed that and suddenly every cook made sense. You probably just hit the point where your instincts finally match your equipment, or your wood supplier switched sources without telling you. Either way, enjoy it while it lasts, because next week a cold front or a windy day will wreck your perfect streak.
