I finally tried offset vs. pellet for a whole brisket cook...
Spent 14 hours babysitting my offset smoker in a drizzle last Saturday, and the bark came out so much better than the last 5 pellet grill briskets I did, but man I don't know how the pros do that every weekend without a nap halfway through.

Come on now, pellet grills are WAY easier and the flavor difference is minimal once you wrap it. Honestly, most people couldn't tell the difference in a blind taste test if you didn't tell them which one was which. All that extra work for maybe 5 percent better bark is just not worth it to me.

Totally agree with you @verawhite, I switched to pellets last year and haven't looked back once.
