I used to trim my brisket at midnight like everyone swears by, now I do it at 8am after a full sleep

Pulled a 14 pound packer at 2am three summers ago and nearly ruined the flat, but after switching to morning trimming with a sharp knife and cold meat, my bark sets way better and I only lost 12 minutes of prep time lmao, anyone else ditch the late night ritual?
