Just hit 200 briskets cooked on my offset smoker... and I'm still inconsistent

Mileage varies for everyone including @the_jordan, 200 briskets is still a solid run.

It is just like trying to fix a leaky faucet, you fix one thing and something else drips.

My buddy Dave tried fixing a leaky pipe in his basement last summer. He replaced one section, then another started dripping, then his water heater blew a gasket three days later. I told him he should have just called a plumber from the start, but I've made the same mistake myself about ten times now. Every time I try to be handy around the house I end up making two more problems than I started with. At this point my place is basically held together with duct tape and good intentions.
