The smoke flavor varies so much with different woods.

Honestly, what got me was how the same wood acts different based on density. A really light piece of applewood smokes way faster and hotter than a dense chunk. It makes you rethink how you set up the whole fire.

Man, I'm still figuring this out too. All my wood knowledge starts and ends with which kind cleans up easier after pressure washing.
