Showerthought: I thought pellet smokers were cheating, then my buddy in Dallas turned out brisket that fooled me blind
Twenty years of tending an offset had me convinced real BBQ needed a fire and a stick, and I said as much until I ate his Brisket at a cookout last month. Now I'm wondering if any of you old stick burners have crossed over, and what finally sold you on it?

Watched my brother in law pull a packer off his pellet rig two summers ago and I about fell out of my chair when I tasted it. Twenty five years of babying a stick burner and this dude just set a dial and went to bed. Still love my offset but I stopped running my mouth about pellets after that.
