Swapped my old wood chunks for a $12 fruit wood test run, wow
Ive been using hickory for years on my offset smoker, but last weekend I grabbed a bag of apple wood chunks from a local hardware store in Austin. Threw two chunks in with some brisket flat and the smoke came out way cleaner, almost sweet. The bark set in about 45 minutes faster than usual and the flavor was lighter, not as heavy as hickory. Has anyone else tried mixing fruit woods with a strong base like oak or mesquite, or do you stick to one wood the whole cook?
