That $160 probe set saved my brisket on Saturday
I spent $160 on a two-probe wireless thermometer from Thermoworks after ruining two briskets last month. My old analog one kept reading 140 when the flat was clearly at 190. This thing let me track both the firebox and the meat from inside my house in Portland, so I finally slept through the stall without panicking. Anyone else trusting wireless probes over the built-in grate thermometers on their offset?

Sleeping through the stall" sounds great until that battery dies at 3am and your brisket's cold. I've seen more smokehouse fires from guys trusting Wi-Fi over their eyes than from old school analog. If the grate therm's off, calibrate it or learn your pit, don't drop $160 on a gadget that needs a firmware update.
