The Memphis in May comp that broke my brisket confidence
Last year at Memphis in May, I watched a guy pull a brisket off at hour 14 and it just crumbled like butter. My own turned out stiff and dry, and I got 47th place out of 200 teams. That night I realized I was trusting my smoker's built-in thermometer too much instead of feeling the meat. Anyone else ditch their probe after a bad comp result and go back to the poke test?

Kinda like how everyone ditches their GPS after one wrong turn and suddenly they're a map expert. But hey, sometimes the old ways just hit different when they actually work.
