The old pitmaster who called out my trimming in front of everyone
I was at a comp in Lockhart, Texas about two years ago. This older guy, must've been 70, walked up to my table while I was trimming a brisket. He just watched for a minute, then said, 'Son, you're carving it like a Thanksgiving turkey, not a brisket.' He pointed at the fat cap and said I was leaving too much on the flat side. I got defensive at first, told him I knew what I was doing. He didn't argue, just pulled out his pocket knife and showed me on a scrap piece. Took him 30 seconds to prove me wrong. That one conversation changed how I trim everything now. Has anyone else had an old timer just shut them down like that and end up being totally right?
