Whoa that's actually a really good point! It's wild how much weather changes what works for different cooking methods. I've noticed it's the same with grills, smokers, even just trying to get a good sear on a cast iron pan outside. You can follow all the same steps and get totally different results just because of the air. Makes you wonder how many other little everyday things get messed up by humidity we don't even think about.
