Was dead set against pellet smokers for years until my buddy brought his over for a brisket cook.

Honestly, I figured it was cheating but that thing held 225 degrees for 14 hours without me touching it once. Now I'm looking at them on sale at the hardware store down the street - has anyone else made the switch?

Man, I feel you on this one. I was the same way for years, thought pellet grills were for people who didn't want to learn how to actually cook. Then my neighbor let me borrow his for a pork shoulder and I had to admit it was pretty amazing not having to babysit it all night. Now I've got one sitting in my garage that I got on clearance last fall. It's not the same as tending a fire but sometimes you just want sleep and good barbecue both.

Tending a fire and getting sleep sounds like my perfect midlife crisis.

Nah, give me the real fire or nothing at all.
