Wasted $40 on fancy butcher paper for brisket, regular pink stuff works fine
I bought a roll of that peach colored heavyweight butcher paper online because all the competition guys use it. Cost me like $40 for a 200 foot roll. Finally ran out and grabbed the standard pink butcher paper from my local restaurant supply store in Nashville for $12. Same size roll. My brisket came out exactly the same. Same bark, same moisture, same everything. I feel like a fool for spending triple the price for 2 years. Has anyone else found a big difference or am I missing something?

I heard somewhere that the heavyweight stuff was supposed to breathe better or something. But honestly my briskets came out the same with the cheap pink roll too. Maybe it's just one of those things the competition guys convinced everyone they needed.
