Put ketchup on my scrambled eggs at a diner in Reno and I will not hear another word about hot sauce
Everyone keeps pushing sriracha or chili crisp on eggs but ketchup beats both and it is not close. Last Friday I ordered scrambled eggs at a spot off Virginia Street, and the guy next to me acted like I committed a crime when I reached for the Heinz. The thing is, hot sauce just sits on top and burns your mouth, while ketchup mixes in and actually makes the eggs taste like something. So what is your go to bottle for eggs, because I am ready to try one more before I give up on anything but ketchup.
Try adding a splash of hot sauce to the eggs while they cook instead of dumping it on after. That way it blends in just like ketchup does and you get actual flavor instead of a mouth full of fire. Ketchup is mostly sugar and vinegar, so of course it tastes good, it is basically candy for eggs. Give Cholula a shot in the pan next time and see if you still reach for the Heinz.
