Best baking week vs worst baking week - which one do you learn more from?
Last Sunday I nailed a sourdough loaf with perfect crumb and crispy crust, first try after months of dense bricks. Then Tuesday I tried the same recipe and it came out flat and gummy - I think my starter wasn't active enough but I'm not sure. The good week made me feel like a pro but I didn't really learn anything new, you know? The bad week forced me to check every variable like water temp and proofing time. Do you guys find you improve more from the failures or do the wins actually teach you something important?

Yeah, totally agree that both kinds of weeks have their place in learning.

Oh wow, are we really overthinking sourdough this much? lol. I mean sure, the failure taught you to check your starter, but the good week literally showed you it's possible so I'd say they're both pretty useful.
