I swore by overnight oats for years until last Tuesday
I used to think overnight oats were the perfect breakfast. Quick, easy, no cooking. But last Tuesday I made a batch with chia seeds and oat milk from a new brand, and it turned into this slimy, weird-textured mess that I couldn't even finish. My roommate tried a bite and said 'this tastes like wallpaper paste.' That gross moment convinced me to switch to a quick stovetop oatmeal with fresh berries instead. Has anyone else had a breakfast staple suddenly betray them like that?

Logan236 you might be onto something with that gum theory because the texture was next level gross, like eating a science experiment that went wrong. I guess my usual method is rolled oats with regular whole milk and a pinch of salt, so swapping two things at once was basically asking for disaster. Chia seeds always looked so innocent in other people's photos but now I know they're just little slime factories waiting to ruin your breakfast. Honestly the stovetop stuff has been treating me right so far even if it means I have to stand there stirring for five minutes like a maniac.

Wait did you try letting the chia seeds soak in the oat milk separately before adding them to the oats? I had the same slime disaster my first time with chia seeds cause I just dumped everything in together and stirred once. Now I mix the chia seeds with just the milk first and let them sit for like 15 minutes, then add the oats and whatever else after that. It gives them time to plump up without turning the whole bowl into goo. Also had way better luck with oat milk brands that don't list gums or carrageenan in the ingredients - the fancy ones with just oats and water work way better for overnight oats.

Three tablespoons of chia seeds and a random oat milk brand is a pretty bold move for someone who "swears by" overnight oats though. I mean, I've been making them with old fashioned rolled oats and regular milk for like five years now, and the only time I messed up was when I tried to sub in almond milk without adjusting the ratio. That slimy texture you got sounds like the chia seeds absorbing way too much liquid or the oat milk having some weird additive (some brands use gums that get really funky overnight). Stovetop oatmeal is great and all, but I'd say give your old method another shot with the exact same ingredients you used before, just to make sure it wasn't a one-time bad batch thing.
