I swore I'd never bake bread from scratch until the baguette fail.

That 'easy' no-knead recipe took me 4 hours start to finish, and my kitchen looked like a flour bomb went off (I don't own a bench scraper, big mistake). Has anyone else spent way too long chasing a simple loaf?

Started kneading dough by hand cause I don't own a mixer. Forty five minutes in I realized I'd forgotten the salt. Threw the whole thing out and ordered pizza.

The baguette fail" is a perfect way to put it. I spent an entire Saturday on a "simple" sourdough that ended up more like a hockey puck. Switched to a wetter dough and a Dutch oven after that, way less mess and way better results.
