My aunt told me I was overcomplicating my tomato sauce. she was right.
My aunt Linda came over last week and watched me simmering sauce with a bunch of herbs and sugar. She flat out said 'you're burying the tomatoes, honey, just use salt and let them speak.' So I made a batch using only 6 Roma tomatoes, a pinch of salt, and nothing else. The flavor was way cleaner and actually tasted like the produce. Anyone else get feedback that simplified their cooking in a big way?

Why does every attempt to be fancy in the kitchen just end up making me look like an amateur trying too hard? I turned my burger into a science project once, added like eight spices, and my buddy said 'next time just put salt on the meat and grill it' - he was right, and now I feel personally attacked every time I look at a spice rack.
