Unpopular opinion: soaking beans overnight is a waste of time if you do this one trick

I tried something different last Tuesday after reading some random blog. Instead of soaking my black beans for 8 hours I just boiled them for 2 minutes then let them sit for 1 hour covered. They came out just as soft as the overnight soak batch I made last week. For real the texture was basically the same and I saved like 7 hours. But some people swear the overnight soak reduces gas better. What do you guys think is the 1 hour quick soak method legit or am I just lucky?

Salt the soaking water, cuts gas better than any timing trick.

I was totally in the "overnight soak or death" camp until I tried that exact quick boil method last week with pinto beans and yeah, they came out perfect. Definitely changed my mind on the whole process.

Gas is more about how you cook them after the soak, not the soak itself. Rinsing them a few times during boiling and tossing the water actually does more than any salt trick.
