Just realized my kombucha SCOBY is over 3 inches thick now
I was cleaning the jar today and it hit me that this thing has been quietly growing for almost two years, which is wild because I almost tossed the whole batch back in 2022 when it got a weird film.

That weird film in 2022 was probably mold trying to start. A three inch SCOBY is a sign it's been breaking down for a long time and is mostly old, dead layers. It can make the kombucha taste really sour and vinegary. I would not trust a batch that had a scare like that to still be good two years later. Starting fresh with a new culture is safer and makes a better drink.
