My sourdough starter turned 100 days old yesterday
It hit me that I've kept this thing alive longer than some houseplants. The loaf it made this morning had the best oven spring yet. Anyone else notice a big jump in quality after a certain age?

So what changed at six months, was it just more reliable or did the flavor get better too?

Congrats on the sourdough senior citizen. Mine is basically a pet I have to feed but can't pet. Hit a real turning point around the six month mark, like it finally got its act together. The loaves went from decent to actually looking like the pictures online. It's weird how a jar of goop needs that much time to mature.

I get what you mean about it needing time, but my experience was the opposite. My starter made its best loaves in the first couple months, when it was really young and active. After that, it settled into a routine and the bread was just consistently good, not better. For me, the big jump came from my own skill improving, not the starter's age.
