Showerthought: My sourdough starter just turned 100 days old

I almost killed it twice in the first month, so hitting triple digits feels like a real win. Anyone else have a starter that just refused to quit?

That's wild, @harper693. It really shows how tough a good starter culture can be. Makes you wonder if the heat just killed off everything else and left the strongest yeast standing. I'd be curious if the flavor changed after that kind of stress test.

Actually, yeast is a fungus, not a bacteria. A starter culture is a mix of both. The heat stress would definitely push the yeast to its limits, though. It would probably make the flavor more sour or funky if the lactobacillus bacteria took over. That survivor's guilt in a jar must taste interesting.
