Showerthought: My whole kraut game changed after a visit to the Asheville farmers market

I was talking to an older lady at her pickle stand about my batch that kept coming out too soft, and she just said 'your hands are too warm, kid, chill your bowl first'. I started using a metal mixing bowl I keep in the fridge for 20 minutes before I shred the cabbage, and the crunch is perfect now. Anyone else have a weird little trick like that for keeping veg crisp?

Oh man, that's genius. I never would have thought temperature mattered that much. I'm gonna try that with my coleslaw too.
